Left slightly softer than the kitchen line on purpose: at 58 HRC the edge rolls instead of chipping when it finds bone, and a few passes on a steel brings it back. Balanced just forward of the bolster.

Keeping this edge
Wash by hand and dry immediately. A dishwasher will not blunt the steel, but it will loosen the handle and dull the finish within a season.
Strop for thirty seconds after heavy use. That single habit pushes a full sharpening out from weekly to roughly every two months.
